The 1% in 1898

No need for Occupy Wall Street type protests at the end of the 19th Century.  Americans then had a much more direct way of reigning in their Masters of the Universe, as evidenced by the menu below, from the Metropolitan hotel, August 22, 1893:

As you can clearly see under ‘HOT ENTREES’ one of the more expensive items on the menu was tenderloin barde a la financiere. It was, of course, a coarser era in many ways and while few in the 21st Century would seriously advocate the butchering and eating of ‘fat cats’, they sure knew how to cull the herd in the Gay ’90s.
